FPI’S SUSTAINABLE PRODUCT PORTFOLIO EXPANDING TO INCLUDE CANADIAN COLDWATER SALAD SHRIMP
FPI’s current line-up of MSC certified sustainable seafood will include Ice Shrimp™ brand cooked and peeled Coldwater salad shrimp. The Ice Shrimp™ family of products, which includes six popular sizes available in 4/2.5 lb. packs, will all carry the MSC blue eco-label, verification of meeting stringent environmental standards for well-managed and sustainable fisheries.
The North Atlantic Coldwater Shrimp Fishery Source in Newfoundland where Ice Shrimp™ is harvested was recently certified by the Marine Stewardship Council and is the first Canadian fishery to receive full certification. The fishery, located off Newfoundland, Canada, is caught by vessels that land at local processing plants and produced as single frozen cooked and peeled shrimp. With an annual catch of more than 177.7 million pounds, the Newfoundland-Canadian Northern Coldwater Salad Shrimp Fishery is not only the largest MSC-certified coldwater shrimp source, but is also the largest shrimp fishery in the world to be certified.
Ice Shrimp™ has remained a popular seafood delicacy since it’s launch almost ten years ago because of it’s sweet, firm texture, fresh taste and menu flexibility. As a healthy, sustainable seafood solution Ice Shrimp™ will only continue to grow in popularity. FPI is excited to have Ice Shrimp™ join our family of sustainable seafood in our commitment to providing operators with sustainable options that help ensure the world’s seafood supply for future generations.” notes Jim LaBelle, Vice President of Sales & Marketing.
FPI has long been committed to protecting the marine environment as a recognized leader in seafood sustainability and best practices in aquaculture. Actively involved within the seafood industry, FPI is a founding member of the Aquaculture Certification Council (ACC), whose mission is to certify aquaculture facilities and ensure responsible shrimp farming standards. Partnering with the Marine Stewardship Council (MSC), FPI carries over a dozen value-added seafood products that are MSC certified.

INTRODUCING A NEW CENTER-OF-THE-PLATE ALTERNATIVE, STRIPED PANGASIUS
FPI has announced the first widespread national distribution of Striped Pangasius in the American Foodservice market. Striped Pangasius has previously been sold in the U.S. in limited quantities for over a decade under a number of different names. The launch of the species by FPI is a direct response to foodservice operator demand for a high-quality, premium, but more affordable alternative to many other center-of-the-plate species. The fish is farm raised for FPI in Southern Vietnam in a sustainable manner and has a mild flavor and a light flaky texture similar to cod, haddock, and other premium ocean caught species. The fillets carry sauces and spices well and are sure to become popular with chefs looking for a more affordable and sustainable alternative to traditional and more expensive choices.
Striped Pangasius is sold widely in the European Union countries and Canada. Both markets are known for their demanding product quality requirements and stringent food safety standards. In fact, thanks to its light, fresh taste, Striped Pangasius has become a popular choice for traditional English Fish & Chips at shops all over the UK.
The fish is raised under the strict supervision of the Vietnamese Ministry of Fisheries and is processed under a HACCP program designed for the in-country packing plants by FPI’s industry recognized quality assurance group. Additional inspections of imports and a program to test every lot imported by FPI is an additional assurance of quality and food safety for operators, chefs and their customers.
Owen Tilley, Corporate Chef & Director of Culinary for FPI said, “Chefs and cooks are going to really like working with this fish. It has many of the same characteristics of the harder to find and more expensive species like cod, haddock and even sole, at a much lower cost per pound. It has a large flake and a light texture so it plates well, whether pan-seared, steamed, baked or prepared under the broiler. But most importantly, it has that natural light, fresh flavor that lets you get as creative as you want to be with sauces and seasoning flavors.”
Initial shipments to FPI distributors began in December of 2008 with national distribution completed first quarter of 2009. Operators interested in trying Striped Pangasius on their menu are encouraged to contact their distributor or go directly to FPI to request more information. FPI’s Striped Pangasius line includes both commodity fillets in popular sizes and cuts as well as three unique value-added offerings: Southern Style, Blazin’ and Ale House Battered.

NEW STRIPED PANGASIUS CREATES CULINARY EXCITEMENT AND TEASES CONSUMER TASTE BUDS
Chefs and culinary schools across the country have something new and exciting attracting their interest and encouraging their culinary creativity. It’s the next great white fish - new Striped Pangasius from Fishery Products International (FPI). FPI made Tilapia an integral part of American foodservice menus over a decade ago and now this new farm raised fish is available!
While this new center-of-the-plate option has the culinary creativity of chefs working overtime, it’s proving to be a big hit with consumers too. The popularity is driven largely to its light texture, a large flake (similar to cod and haddock) and a fresh, naturally mild flavor that carries sauces and seasonings particularly well. The fact that it’s produced in a sustainable aquaculture environment is an added bonus for chefs and operators looking to address concerns about social responsibility.
Striped Pangasius’ very attractive price point is also making it very popular with operators looking for premium menu options with a better price point than the more traditional and expensive ocean harvested seafood choices.
Owen Tilley, Corporate Chef & Director of Culinary for FPI said, “Chefs and cooks are going to really like working with this fish. Striped Pangasius offers the kind of menu flexibility a chef is always looking for in any center-of-the-plate protein choice. They can use it to make a simple upgraded Fish and Chips dinner for casual dining, create a flavorful Caribbean style Striped Pangasius a la Parilla for lunch or even prepare an impressively plated Baked Striped Pangasius, ‘en Sac’ for a white tablecloth operation. Our culinary team worked closely together to make sure we had a solid range of recipe support, from developing the basics that a lot of chefs will use as a base to build their own creations on, to complete turnkey recipes for ethnic cuisine alternatives from North African to Indian to traditional New England entrees.”
Chef Tilley continued, “The Striped Pangasius line gives the back of the house team a lot to work with and includes fillets in the most popular sizes and cuts. Our award winning culinary team has even created three unique, premium quality, value-added offerings and some exciting, easy-to-fix recipe ideas for them too. The added value varieties include: Southern Style, Blazin’ and Ale House Battered. They are perfect for chefs and cooks that may not always have the time or the skilled staff for more detailed or complex preparations. They’re going to find that Striped Pangasius is easy to work with and has the same characteristics of the harder to find and more expensive species like cod, haddock and even sole that they are already familiar with, but at a much more reasonable cost per pound.”

Fishery Products International makes a splash with the introduction of two new fillets to their successful Pan-Sear Selects® product line-up. Chefs and consumers alike will be enticed by zesty Chili-Lime Tilapia and timeless Classic Seasoned Cod.
Sure to heat up any menu, FPI’s Latin-style Chili-Lime Tilapia delivers big, bold flavor with little prep time. Featuring premium ingredients such as ancho chilies, poblano peppers, and fresh lime paired with mild, white Tilapia, these fillets create the perfect balance of flavor and texture. A familiar favorite, FPI’s Classic Seasoned Cod is simply dressed with cracked pepper, salt, garlic, and onion. Providing the perfect building block for any great meal, these Classic Cod fillets are delicious as is, or perfectly complimented by favorite sauces and side dishes.
In today’s culinary influenced environment, the way a meal is prepared is just as important as the ingredients that go into the meal. As a cooking technique, pan-searing has grown tremendously in popularity over the past few years fueled by consumers’ desires for healthier, lighter menu options that don’t sacrifice taste or flavor. “FPI’s Pan-Sear fillets are 100% breadcrumb free and are only lightly dusted with seasonings that make for a flavorful and nutritious experience”, comments Chef Owen Tilley. Pan-Sear Selects are specially designed with the operator in mind. They revolutionize weekly menu planning with solutions that extend to every category including appetizers, soups, wraps, and entrees. Additionally, Pan-Seared Selects can go from freezer to plate in under ten minutes, regardless of cooking method. “The Pan-Seared Selects line was designed to do more than just offer a lively, satisfying taste experience,” continues Tilley. “Each of our Pan-Sear fillets offers an unmatchable level of versatility and efficiency in the kitchen.”
